The initial Hyde Park Wines will be a set of stickies plus the Wine for Spice range.
Wines for Spicy
Food are pretty
much the same as wines for summer - refreshing. We
are globally recognised as the experts in matching wine with curries and spicy
food.
Hyde Park Wines not only supplies the highly acclaimed range of refreshingly semi-sparkling wines to drink with curries from Wine for Spice but we supply a full international range of wines for restaurants with a wine list selection consultancy service and provision of the wines.
I
include both dry and sweet fortified wines here
Spain - naturally sweet wines from Empordą, Mistelas from Valencia, Moscatels from Malaga including a superb Moscatel de Naranja, an ornage impued wine, and a brace of very old Pedro Ximenez (PX) from Montilla-Moriles in Andalucķa and Manzanillas, Olorosos, Vino de Pasas and Moscatels from Lebrija just outside Jerez.
France - Coteaux du Layon from The Loire valley; Maury from Roussillon
Italy - Vin Santo from Tuscany
Hungary - Tokaji from Hungary
Portugal - Port of course
and gradually many more ...

A range of wines suitable for vegetarians and vegans. Most wines are
clarified using a range of animal products. But some aren't.
So what are Vegetarian Wines?
Vegan or vegetarian wine is wine made without animal products. As such it can be
part of a vegan diet. While wine is essentially made from grapes, often animal
products are used in small amounts in the production process. Wineries might use
animal-derived products as finings to filter the wines before bottling. To
remove proteins, yeasts, and other organic particles which are in suspension
during the making of the wine, a fining agent is added to the top of the vat. As
it sinks down, the particles adhere to the agent, and are carried out of
suspension. None of the fining agent remains in the finished product sold in the
bottle, and not all wines are fined.
Winemakers are not required to put on their label
which clarifier is used but we make our own enquiries
Examples of animal products used as finings are:
Gelatin - made from horses hooves
Isinglass - a substance obtained from the bladders of fish especially sturgeon
and cod;
Chitosan - produced commercially from chitin , which is the structural element
in the exoskeleton of crustaceans (crabs, shrimp, etc.;
Casein - a product derived from milk and used independently in many foods as a
binding agent.
Egg white - the common name for the clear liquid (also called the albumen or the
glair/glaire) contained within an egg.
Bull's blood is also used in some Mediterranean countries but is not allowed in
the U.S. or France.
As an alternative to the animal products:
Bentonite, a natural, inert clay powder, can be used to clarify the wine.
PVPP is sold under the brand name "Polyclar AT." It is manufactured in the form
of very small, round plastic beads. PVPP is a light weight plastic similar to
nylon, and this material is completely insoluble in water or wine.
Vegetable Gelatine.
There are some vintners who let the wine's sediments settle naturally. without
use of fining agents.
Petillant and fully Sparkling fizz from Moscato to rare Champagne quality Cavas and Champagne itself especially off dry Champagnes. I will include a red traditional method Sparkling Wine from Spain and amazingly good quality Lambruscos in Italy a world away from mass produced stuff.
I speak Spanish and know Spain well through my Spanish wife Esperanza and am working with wineries in up and coming areas such as Empordą and Montsant.
